Apple Custard Crumble Cake

Ingredients

Base

  • ½  cup coconut flour
  • 1 cup almond meal
  • ¼ cup coconut sugar
  • 2 tbsp vegan butter

Apples

  • 2 apples
  • 1 ½ tsp cinnamon

Custard

  • 200g plant-based condensed milk
  • 400g tin coconut cream
  • 2 tsp vanilla extract
  • ⅓ cup cornflour
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp butter

Crumble

  • ¾ cup oats
  • ¼ cup almond meal
  • ¼ cup flour
  • ¼ cup coconut sugar
  • 2 tbsp melted butter

Method

Base

  1. Blitz all ingredients in a food processor until the consistency of wet sand. 
  2. Press into lined and greased cake tin and bake at 170℃ for 10mins. 

Apples

  1. Peel and dice 2 apples into small pieces. Coat with 1 ½ tsp cinnamon. Spread evenly over base. 

Custard

  1. Whisk all ingredients together in a saucepan over medium heat until thick. Pour over base. 
  2. Bake at 170℃ for 40mins until just starting to set.

Crumble

  1. Mix all ingredients together until combined. Sprinkle evenly over the top of the custard and bake for another 20mins. 
  2. Allow to completely cool in the fridge before serving.
