Apple Custard Crumble Cake
Ingredients
Base
- ½ cup coconut flour
- 1 cup almond meal
- ¼ cup coconut sugar
- 2 tbsp vegan butter
Apples
- 2 apples
- 1 ½ tsp cinnamon
Custard
- 200g plant-based condensed milk
- 400g tin coconut cream
- 2 tsp vanilla extract
- ⅓ cup cornflour
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp butter
Crumble
- ¾ cup oats
- ¼ cup almond meal
- ¼ cup flour
- ¼ cup coconut sugar
- 2 tbsp melted butter
Method
Base
- Blitz all ingredients in a food processor until the consistency of wet sand.
- Press into lined and greased cake tin and bake at 170℃ for 10mins.
Apples
- Peel and dice 2 apples into small pieces. Coat with 1 ½ tsp cinnamon. Spread evenly over base.
Custard
- Whisk all ingredients together in a saucepan over medium heat until thick. Pour over base.
- Bake at 170℃ for 40mins until just starting to set.
Crumble
- Mix all ingredients together until combined. Sprinkle evenly over the top of the custard and bake for another 20mins.
- Allow to completely cool in the fridge before serving.
